An Experiment in Open Source Sustainability
Please read the information below as The Lab is something the likes of which you've never experienced before! We are experimenting with connections between consumption and sustainability and due to this we're exploring new business models.

We thank you for your support and involvement as we work towards creating Detroit's only Open Source Sustainable Vegan & Raw Food Restaurant & Education Center. We are moving into our second phase of development and are actively looking for additional investors. We would love to share the impressive impact Open Source Sustainability can have with you!

The concept of Open Source Sustainability grew organically out of our first phase of experimentation as the Detroit Evolution Laboratory. In our first year, The Lab, rather than create a rigid product or service, went live to the public in an embryonic form that's purpose was to be as interactive and malleable as possible. This time underground was vital to connect to our community, allow for the Lab to be honed to the peoples' needs, to network with other food, health and sustainability pioneers, connect with diverse community and business leaders and to establish strong ties to media outlets. During this time we have shared our talents with the community and learned a great deal about what works and what doesn't work. Our decisions to prepare Vegan & and Raw Food, to pursue Zero Waste, and to make public all aspects of our work from our recipes to where and how we shop, have all been based on feedback from our community.

We also offered Angela's incredible Vegan and Raw Food dishes during this first phase. At first four days and week and most recently two days a week. Our lunch offerings showcased Angela's talents to the community and served as a development tool for our full menu. As we move into this second phase we are sadly discontinuing our lunch offerings completely. Our focus now shifts to developing the space in Eastern Market that will house the full-scale Lab. Please be aware that we will still provide our catering services and we will gladly put together lunches, even for smaller groups!
